Ducros Ras el Hanout (spices for couscous )
This is an excellent example of a mixture of spices as we like them in the Maghreb. Ras-el-Hanout (which means "the head of the store") is from Morocco. This fruity, sweet but heady composition is traditionally prepared by the grocer. The many spices employed, the proportions of which are usually kept secret, may vary, but cumin and usually ginger are still found.
