Every year one forgets how hot Durbs can get! WOW there have been some real scorchers lately. In this heat no one feels like a big heavy meal.
Here's a fresh delicious salad that's quick to prepare and will certainly cool you down on a hot Durban day!
What you'll need:
- Col'tempo pre-sliced coppa (you dont have to use the whole packet, just fold the plastic back over and it will be perfect in the fridge)
- 1 clove of crushed garlic
- 1/2 a small red onion
- Watermelon
- Rocket
- Butter lettuce
- Walnuts or pine nuts
- Balsamic Vinegar
- Olive oil
- Parmesan or Grana Padano Cheese
Method:
- Roast the wallnuts/pinenuts on a pan.
- Cut watermelon into cubes, enough to full 4 cups.
- Slice 1/2 the red onion very thin.
- Chop the basil.
- Make a nest of 2/3 handfuls of rocket, then add your basil, onion and watermelon.
- Place about 12 pieces of coppa on top and gently turn it so it mixes slightly.
- Dress with your *vinaigrette and serve with grated Parmesan or Grana padano.
*Vinaigrette:
- 1 Tablespoon of lemon juice
- 1 Tablespoon of balsamic vinegar
- 2 Tablespoons of olive oil
- 1 clove of crushed garlic
- Salt and pepper to taste
- Mix well before you dress the salad.
